South Southeast facing vineyards provide the grapes with a nice balance in ripeness, while maintaining their natural richness and acidity. Maceration takes place just around a month, and then the wine is aged for 16 months in used barrel, and a final 6 months resting in bottle, before hitting the road. The wine has certainly developed beautifully over the past 6 years, with structure and power
